Food waste is not created when food is thrown away — it is created when it is produced

Food waste in hospitality is the food you buy, prepare or serve that never gets sold: overproduction in the kitchen, over-replenished buffets, expired stock from over-ordering and portions coming back from the dining room. What does food waste regulation ask of operators?

Regulation across Europe is turning good practice into obligation. Spain's food waste prevention law, in force since 2025, is a clear example of where the sector is heading: operators must keep a prevention plan that identifies where waste is generated and how it is reduced; apply the use hierarchy (prevent first, then donate or reuse, and only then discard); and let guests take unfinished food home at no extra charge. What is the difference between shrinkage and food waste?

Shrinkage is every product loss between purchase and sale: trimming, cooking loss, expiries, portioning errors. Food waste is the share of that shrinkage that ends up as discarded food which could have been prevented or put to use. Every reduction plan starts by measuring shrinkage: if you don't know how much is lost and where, no plan will work.

How much waste can realistically be reduced?

In pilots measured with our clients, matching production to forecast demand reduced waste by 20-30% against each client's own baseline, and overproduction by up to 40%. The range depends on the starting point: the more production relies on gut feeling today, the more there is to gain.

What does regulation require from a restaurant or group?
